As the sugarcane juice is heated, the water content gradually evaporates, leaving behind a thick, viscous liquid. During this process, impurities rise to the surface and are skimmed off, contributing to the purity of the final product. The concentrated liquid eventually solidifies into the characteristic blocks or shapes of jaggery. But before it solidifies we mix sesame seeds(til), Peanuts(moongaphalee), dry ginger(saunth), and desi ghee of cow. The traditional nature of jaggery production ensures that it retains more natural minerals and vitamins compared to highly processed sugars.
